With Fat Head Low Carb pizza crust being very popular on my blog right now with lots of positive feedback (why lie? It’s delicious!), I thought I would make a new recipe out of it with a little fun twist – Fat Heads Low Carb Pizza bites with mini pepperoni.

So Fathead is a brilliant low-carb pizza dough. You can make so many things out of it – rolls, garlic breads, mini bites and crackers. Not only it’s quick and easy to make, but it tastes delicious. It doesn’t taste low-carb-y or eggy and the crust holds pizza toppings so well, you can keep piling and piling your favorite toppings on top.

Fat Heads low carb pizza bites are great for portion control. You can store them in the refrigerator or freezer. So next time you’re ready for a a bite, just pop it into a toaster oven and sprinkle more fresh cheese on top. I’m so glad I have few extras in the fridge right now.

The Ultimate “Fat Head” Pizza Crust  (makes 10 mini pizzas or 10-12 inch thin crust pizza)

Nutritional value per 1 mini pizza bite: 2.45 g fat, 34 mg sodium, 0,65 g Carb, 0.11 g sugar 2 g protein. This is not including the toppings – whatever you decide to put on top (vegetables or meat) will be extras.

For crust:

1 and 1/2 cups shredded mozzarella
3 TBS cream cheese
1 egg
2/3 cup almond meal
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon garlic powder

For topping:

Pizza sauce
Choice of vegetables, meat, cheese, etc. (For my toppings I used marinara, roasted peppers, mini pepperoni, mozzarella and fresh basil)

Directions:

Preheat oven to 425 degrees (215 Celsius).  Microwave mozzarella and cream cheese in a bowl until soft, about 30 seconds.  Add egg, almond meal, oregano, and basil and blend well into a dough ball.  Press into a circle shape or square shape mini pizzas on baking sheet with parchment paper greased with a thin oil coating. (you can use Avocado oil, Olive oil or whatever oil you have).  Sprinkle garlic, salt and basil over surface of pizza crusts. Poke few holes with fork to prevent the crusts from rising while baking.

Bake crusts in oven for 8-10 mins.  Then broil (cook top) for 1-2 minutes. It should golden brown, should be easy to lift and should look something like this.

Add your pizza sauce and toppings, pop back in oven for 4-5 more minutes until cheese is melted and bubbly.
