The vibrant purple hue of roasted beet chips is an instant mood-lifter for me. Beets have an earthy and slightly sweet taste and I feel it is the perfect addition to a Potato-beet salad, roasted veggie dish, or even a beetroot soup (yes, it’s a thing, and yes, it’s delicious). Beets are also packed with nutrients like vitamin C, iron, and fiber. And let’s not forget the health benefits of reducing inflammation and lowering blood pressure.

Sure, beets may not be the first thing that comes to mind when you think of snacking, but that makes them all the more deliciously unexpected. Plus, with the air fryer, you get the satisfying crunch without all the greasy guilt.

How to Make Crispy Beet Chips in the Air Fryer

Choose the Right Beets

Before you start cooking, it is important to choose the right beets. Pick beets that are fresh, firm, and have a deep, rich color. Avoid beets that are soft or have spots or blemishes. Make sure to wash and peel the beets before slicing them into thin, uniform slices.

Season the Beet Chips

While beet chips taste great on their own, adding a bit of flavor can make them even more delicious. You can use different herbs and spices to add flavor to your chips, such as garlic powder, smoked paprika, and salt. Lightly sprinkle the seasoning on the chips before placing them in the air fryer.

For a sweeter version of beet chips, sprinkle on a pinch of Cinnamon, brown sugar, or Chinese Five spice.

Use the Right Temperature

Preheat your air fryer to 375°F (190°C). Place the seasoned beet slices in a single layer inside the air fryer basket. Do not overcrowd the basket, as this will cause the chips to cook unevenly. Cook the chips for 10-12 minutes (turning them halfway), or until they are crisp and golden brown.

Keep an Eye on Them

It is important to check on the chips frequently to make sure they don’t burn. Depending on the thickness of the slices and the wattage of your air fryer, the cooking time may vary. So it is best to keep an eye on them to avoid overcooking or burning the chips.

How to Slice Beets Evenly

Before you proceed with thinly sliced beets, you may want to try to cut beets in wedges and try Air Fryer Roasted Beets.

For beet chips, select the medium beet in your bunch and give it a good scrub down. Then, using a sharp knife (I use Mad Shark kitchen knife) cut off both ends. Now comes the fun part. Instead of trying to slice the beet horizontally, opt for a vertical cut – your slices will come out much more symmetrical this way.

A little easier way is to slice the beet in half. From there, you can slice the halves into even, uniform pieces.

Or use a Mandoline Slicer, where you can adjust the thickness of the veggie to 1 mm.

Depending on how thin you slice your beets, you may set your air fryer for less cooking time.

Can I use Canned Beets?

Yes! Simply drain them from the liquid, slice them thin, and toss them in a mixture of oil, paprika, garlic powder, and salt. It is going to be easier to slice them since most canned beets are fully cooked and soft.

Store the Chips

Once the beet chips are cooked to perfection, remove them from the air fryer and let them cool for a few minutes. I find myself eating the entire head of beetroot, but if you do have leftovers, store them in an airtight container to keep them fresh and crunchy. They will last up to one week in the fridge.

Yes, they may become soggy once stored in the fridge. Reheat them in the air fryer at the lower temperature, 350°F for 1-2 minutes. This will bring back their crispiness.

Are Beets Low-Carb Veggie?

While they do contain a bit of natural sugar, one medium-sized beet only clocks in at about 8 net carbs. Plus, with their earthy flavor and versatility in both sweet and savory dishes, they might just be the MVP of the veggie world. There are only 4 net carbs in one serving in this recipe (half a medium beet)

Ingredients
  

  • 2 medium-size beet Washed and peeled
  • 1 Tablespoon Extra virgin Olive oil Or avocado oil (coconut oil)
  • 1/2 teaspoon Salt + Pepper to taste to taste
  • 1/2 teaspoon Seasoning blend I used Vegeta all purpose seasoning
  • Avocado oil spray.
  • 1 Tablespoon Fresh chopped parsley optional

Instructions
