I like to go the traditional way with toppings, but feel free to add whatever toppings you like and make these as creative as you desire! These
potatoes are the perfect combo of flavorful and crispy! We make them over and over and I’m sure you will love them too! Yum!

Ingredients

  • 2 baked potatoes. Feel free to double the recipe
  • 1/2 cup shredded cheddar cheese
  • ¼ cup bacon bits. Can sub for cooked bacon or air fryer candied bacon, finely chopped. Divine!
  • ½ cup sour cream
  • Spray oil. Or olive oil for brushing.
  • Chives, for topping. (can substitute with green onions, finely chopped).

Instructions

1. Preheat the air fryer to 365 degrees F/ 185 degrees C. 
2. Cut the baked potato in half lengthwise. See how to make baked potatoes in the notes below.
3. Using a spoon, carefully scoop out the potato flesh, leaving a ¼-inch rim inside. You can use the leftover potato flesh for these Air fryer Mashed Potato cakes.
4. Place the potatoes in the air fryer, skin side up, spray with oil, and, optionally, sprinkle with salt and pepper. 
5. Cook for 6-10 minutes, flipping halfway through. 
6. Sprinkle the cheese evenly among the skins and cook for 3-5 minutes, until the cheese is melted and caramelized.
7. Top each potato skin evenly with bacon, sour cream, and chives. Serve immediately. Enjoy.

How to make baked potatoes in the microwave.
For this recipe, it is best to use baked potatoes.
The easiest and quickest way is to cook the potatoes in the microwave for 5-10 minutes, depending on how many potatoes you have, the size of the potatoes and how powerful is your microwave.

How to make baked potatoes in the Air fryer:
Using a fork, poke holes into the potatoes all over the skin.
Rub the outside of the potatoes with oil, then sprinkle with salt & pepper to season.
Place the potatoes into your air fryer basket/tray.
Airfry mode at 390F for 35-40 minutes. Flipping halfway.
Let them cool and proceed with air fryer potato skins.

  1. I bake my potatoes in microwave. I agree, quick and easy. come out fluffy. I add a little Cajun before topping with cheese….so good!

  2. I’m not a whiz in the kitchen. Love potato skins and was trying your recipe. At first I was trying to scoop the flesh out of a raw potato cut in half…difficult..how does she do that? LOL. And then I realized I was supposed to bake first in the microwave and then scoop out the flesh!! They turned out yummy!!! 🙂

    1. Thank you. Glad you microwaved them first. You can also bake in the air fryer or oven instead. I can imagine scooping the flesh out of raw potatoes is hard 🙂
