I love how air fryers have revolutionized the potato game, and potatoes have never tasted better. What Potatoes to Use?

While any potato can technically be sliced and air-fried, I love thin-skinned potatoes such as Yukon Gold, Russet, or Red Bliss. These varieties have a high starch content, and low water content, which makes for a dry and crispy chip. Their thickness and size make them the ideal candidate for slicing into that perfect thin, uniform shape that will give your chips a satisfying crunch.

How to Make Potato Chips in the Air Fryer

Choose and prep the potato. Starchy potatoes like Russet or Yukon work best for making chips in an air fryer. Wash and scrub the potatoes and slice them thinly. Maintain the thickness of the slices as uniformly as possible. You can use a mandoline slicer or a sharp knife for this purpose. Aim for 1/8 of an inch (2-3 mm) in thickness.

Soak’em. Using a colander, rinse the potato slices for a few times under running cold water to get rid of excess starch. Alternatively, you can soak them in cold water for 10 minutes. Drain the water and pat dry the potatoes using a clean kitchen towel. Please don’t skip this step, as it helps in getting crispy chips.

Season. You can go for classic salt and pepper or experiment with different seasonings. I love adding paprika, garlic powder, and rosemary. Whatever seasoning you use, toss the potato slices with oil and seasoning until they are evenly coated.

Air fry. Preheat your air fryer to 400°F (200°C). Once it’s being preheated, arrange the potato slices in a single layer in the air fryer basket. Don’t overcrowd the basket, as it will result in uneven cooking. Cook the chips for 10 minutes, flipping them over halfway through. Keep an eye on them to avoid burning.

You may notice that potato chips get puffy as they cook. This is normal. They will de-puff as soon as they stop cooking.

Tips & Variations

Yes, air frying your potato chips takes a bit more effort than simply purchasing a bag of chips from the supermarket. But the results are rewarding. After all, you’re taking care of your health by controlling on what goes into your potato chips and avoiding all the preservatives added to the mass production of chips.

  • Mind the slices. As a general rule of thumb, the thinner your air fryer potato slices, the better. Try to keep the slices as even as possible and avoid thick pieces that take longer to cook. Also, be sure to check them frequently as they air fry. The thinner you slice the potatoes, the crispier they will be. But, they may also burn more easily. So, remove those done faster to avoid burning them while others are still crisping.
  • Quality Oil. The oil you use can make a massive difference in the outcome of your recipe. Avoid aerosol-type sprays with additives as they may damage the interior of your air fryer in the long run. Extra virgin Olive oil, canola, or avocado oil is always a great option. If you enjoy Truffle-flavored fries, you can try Truffle-flavored oil instead of regular oil when tossing the potato slices with a mixture of spices. Delicious!
  • Dry them completely. Ensure that your air fryer potato slices are completely dry before air frying. This way, you’ll avoid steaming them first. Instead, they’ll start cooking and crisping immediately.

Leftovers

Air fryer potato chips stay crisp for a short time and it’s perfectly normal. That’s why it’s a good idea to enjoy them while they’re warm and fresh and cook them in small batches. Store leftover potato chips in an airtight container or freezer storage bag in the refrigerator for up to 5 days, or in the freezer for up to 3 months. Re-crisp in the air fryer for 2-3 minutes.

Ingredients
  

  • 2 medium-size potatoes 2 cups of thinly sliced russet potatoes or gold potatoes (no need to peel them)
  • 2 tablespoons extra virgin olive oil Or avocado oil
  • 1 teaspoon Salt & pepper for the taste
  • 1 teaspoon seasoning of choice I used Italian seasoning
  • Avocado oil spray
  • 1 tablespoon fresh chopped parsley optional. Feel free to use other spices like garlic, onion powder, paprika, or Chipotle.

Instructions
 

  • Thinly slice the potatoes – the thinner, the better. You can use a sharp knife, a mandoline slicer, or a food processor attachment.
  • Rinse the potato slices under cold water.
    Alternatively, soak the potato slices in cold water for 10 minutes. Then, drain and change water and soak in some new cold water for another 10 minutes.
    Drain and pat dry the air fryer potato slices. You can use paper towels or a cotton kitchen towel.

  • Toss the potato slices with oil, salt, pepper, and seasoning.
    Lightly grease the air fryer basket or tray with spray oil.
  • Arrange the potato slices on the air fryer cooking basket or tray. Give them some space so they do not overlap.

  • Preheat your air fryer to 400°F for three minutes (200F). Once it's being preheated, arrange the potato slices in a single layer in the air fryer basket.     Taste and add some salt if desired. Season with fresh parsley, and enjoy!

  1. I never spray Pam or any oil in my Air Fryer – it will build up a residue that will not come off and will leave a permanent odor. I found this out the hard way – have to get rid of my old fryer and buy new.

  2. My Air fryer says not to use olive oil because of high burning content. I like using olive oil as opposed to vegetable oil. Is this safe to use olive oil?

    1. Although I found that using olive oil is safe, when used up to 350F-375F. I would recommend using Avocado oil instead. It has a high smoke point up to 500F. It has a very mild neutral flavor. Practically tasteless

  3. Way too much work to air fry these few chips. Too long to fool around with few potato chips by standing there and flipping etc. I know it looks good and I’m sure it also tastes great but the hassle is not worth, considering the fact that there’s just so much you can fit in the air frier.
