The air fryer takes these earthy root vegetables to a whole new level. I love how Air-fried roasted beets come out sweet with gorgeous crisp on the outside and tender on the inside.

Just like my beloved Air Fryer Beet Chips, the method of cooking beets in the air fryer is simple and takes half the time than baking beets in the oven: slice the beets into wedges, toss them with a bit of oil, and season with your favorite spices. Then, pop them into the air fryer, and in no time you’ll have a side dish that’s as visually stunning as it is delicious. Not only are they a healthy addition to your meal, but the gorgeous deep red color also adds a fun pop of color to your plate.

Air fryer roasted beets have a crispy exterior that boasts more flavors than other methods.

May I also recommend some of my other favorite crispy root vegetables? Air Fryer Roasted Radishes, I love how their strong flavor cooks off when roasted, making them taste like a version of low-carb potato chips. My kids are obsessed with Air Fryer Carrots. We love how they turn out sweet and tender with crispy edges. It’s the only way we enjoy carrots lately.

Ingredients

Beets. Use 2-3 medium beets. Fresh and raw. Peel them and cut into 1-inch wedges. You should be able to find beets in the fresh vegetable section of the supermarket. Most likely you will find them next to carrots and radishes.

Oil. A tablespoon of extra virgin olive oil, Coconut oil, or Avocado oil works beautifully. Oil helps to crisp up the exterior of beets while preventing them from burning. You can use spray oil instead.

Seasoning. Use any seasoning blend of choice. Or toss them with a pinch of salt, pepper, garlic powder, and cumin.

Instructions

Prep the Beets. Before you get started, you’ll need to wash and peel your beets. Once they’re clean, cut them into wedges or chunks that are roughly the same size. This ensures that they cook evenly in the air fryer. Preheat your air fryer to 375F while you prepare the beets.

Toss’em with Oil and Seasonings. In a large bowl, toss the beet wedges with olive oil, salt, pepper, garlic powder, and cumin (Please see picture below). Make sure that each beet is evenly coated with the oil and seasonings. These ingredients add delicious flavor to the beets and a crispy texture as they roast in the air fryer.

Air Fry the Beets. Arrange the beet wedges in a single layer in the air fryer basket. It’s important not to overcrowd the basket, as this can affect the cooking time and result in unevenly roasted beets. Air fry the beets for 10 minutes, then flip them over and air fry for another 8-10 minutes. This ensures that both sides are evenly cooked. The beets are done when they’re fork-tender and lightly browned or charred on the outside.

How to serve

Serve the Roasted Beets. Once the beets are done, remove them from the air fryer and transfer them to a serving dish. You can garnish them with fresh herbs like parsley or thyme for extra flavor. I love dipping the crispy beet wedges in Homemade Chick-fil-A sauce.

What to do with leftovers?

Store the cooked roasted beets in an air-tight container in the refrigerator for up to 5 days. Re-crisp in the air fryer for 2-4 minutes.

Add beets to salads for a pop of color and taste, Some of my favorites are Arugula Beet salad with Goat cheese or Homemade Potato-Beet salad.

Slice them up and use them as a sandwich topping or shred them and add them to delicious Borshdt soup.

Blend roasted beets into a smoothie or juice for a nutrient-dense and refreshing drink.

Can I use Canned Beets?

I recommend fresh raw beets as your first choice for roasting beets in the air fryer, however, canned beets can work too. Just be sure to thoroughly dry them before tossing them with oil and seasoning in your air fryer, and be mindful of their tenderness so they don’t turn to mush.

Variation

Experiment with different spice combinations and sauces to create a personalized twist on the classic roasted beet. Add a sprinkle of cinnamon and a drizzle of honey or brown sugar for a sweet and savory treat. Or, add a sprinkle of cumin and a dollop of tahini for a Middle eastern inspired spin.
