This morning I was looking around my kitchen for something interesting to eat for breakfast and found a quarter loaf of French bread staring at me.  I had used most of the bread the night before for the homemade French onion soup I made for my family.  Now I was thinking what could I do with what remained.  Almost immediately garlic, butter, and cheese popped into my head.  I could make some type of garlic cheesy bread variant but that didn’t seem too breakfasty to me.  What if I threw some eggs and maybe some fresh cucumber slices into the mix?  Whenever I make new dishes I always like to have one variation that is a bit vegetarian friendly.

Okay, so now that I have your taste buds excited let me explain how I put this easy meal together.  First I started with a pair of 2-inch thick slices of French bread. I buttered them up, and then sprinkled some garlic powder on top of each.  Then I spread some shredded mozzarella cheese on top of both bread slices and set them on my toaster ovens baking pan.  I placed the baking pan into my toaster oven and set on broil for 4-5 minutes.  While this was cooking I fried up an egg over easy in a pan on the stove.  The trick with broiling in the toaster oven is to keep an eye on it to make sure the bread or cheese doesn’t burn.  The garlic french bread was done and shortly thereafter so was my egg.  I placed the egg on top of one slice of bread and a couple of fresh organic cucumber slices on the other.  In the end the creation was a very flavorful breakfast that was not over-filling.

  8. I can’t believe I never thought of this! Thank you!!! We have garlic bread with dinner one or two times a week – that means we sometimes have leftover which could easily be used for this. Am thinking that I’ll try it with a colby/jack cheese though.
