You can personalize this mini heart-shaped cheesecake with any delicious topping like fresh fruits, caramel, or whipped cream. This recipe is simple to follow and won’t take you hours to achieve. Plus, it tastes just as good as any cheesecake from your favorite bakery. Ingredients

For the crust:

  • 1 ½  cups graham cracker crumbs, (crushed graham crackers)
  • 2 tbsp Sugar
  • 4 tbsp Butter, Melted

For the cheesecake filling:

  • (4) 8oz Packages of Cream Cheese, room temperature
  • 1 Cup Sugar
  • 1 tsp Vanilla Extract
  • 4 Large Eggs
  • 2 Tablespoons sour cream

Preheat the oven to 325°F. Mix the graham cracker crumbs, sugar, and melted butter until well combined. Press this mix firmly into the bottom of a greased 3-inch silicone heart-shaped mold. Bake for 10 minutes at 325°F (160°C).

While the crust is baking, in a large separate mixing bowl, beat the cream cheese until it’s smooth and there are no lumps. Add in the sugar and mix again for a few minutes. Then, add the eggs one at a time, making sure they each get well incorporated before adding in the next one. Mix in the vanilla extract and the sour cream.

Pour the cheesecake mixture over the crust into your molds. Use a spatula to smooth it out, making sure it’s completely even. Place mold into a roasting pan. Fill pan halfway up with hot water. Bake for 30-35 minutes or until the edges are set, and the center is still wobbly.

Allow cheesecakes to cool for 1 hour at room temperature then place them in the freezer for 1 hour before removing from molds.

Remove from molds and drizzle melted chocolate over the top before serving.

Yields: 12 Heart shaped Cheesecake Hearts on 2 silicon heart shape molds.

*If not using a heart mold, use a 9-inch spring form pan and bake for 90 minutes or according to instructions.
