Hard boiled eggs and egg salad are favorites in my house, but I’m definitely not a big fan of boiling eggs on a stove, timing the procedure and most importantly de-shelling the eggs. This is when my InstantPot comes in very handy. I wanted to share the very easy way of making hard boiled eggs in InstantPot. It’s one of my favorite things to do in InstantPot. I think it’s an easiest method ever. No peeling involved.

Step 1: Spray the glass Pyrex bowl with cooking spray ( Ceramic or stainless steel will work too. As long as it fits into IP liner)
Step 2: Crack all your eggs directly into the glass bowl – Do not worry if one or two egg yolks cracks in broken.
Step 3: Place it inside the Instantpot, that already has 1 cup of water, on top of the trivet.
Step 4. Manual high pressure for 10 minutes and a quick release.
Step 5. When ready, take the glass bowl out of the pressure cooker, let cool for a minute, then take a long butter knife and slide against the edges slightly to insure the cooked egg loaf separates from the glass bowl easily (Just make sure you spray it before you crack the eggs or else pieces of eggs may stick to it). Then dump the egg loaf right onto the cutting board, chop ’em up and add it to your favorite salad.
Isn’t it so cool? The taste of the eggs is perfect and hard boiled. The chopping of the eggs makes a big difference – so quick and easy – either mush ’em with your fork or chop ’em with your knife. Most importantly no peeling required.
Below I share my recipe for my recent favorite and most delicious way to use the eggs up. My kids even enjoy this delicious healthy sandwich or eat it plain or as a dip and devour this deliciousness.
Avocado egg salad recipe:
4 hard boiled eggs
1 avocado smashed
1 tsp Dijon mustard
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp dried parsley
1 tsp lemon or lime juice
Some paprika, green onion or dill for decoration
Mix all the ingredients in a bowl. Put on bread, lettuce, pita, dip, or eat plain. It makes 3-4 full sandwiches. I usually double this recipe for my family.
