Ingredients You’ll Need
- 3 tablespoons almond flour (or coconut flour for a nut-free option)
- 1 tablespoon unsalted butter (or coconut oil for dairy-free)
- 1 large egg
- ½ teaspoon baking powder
- Pinch of salt (optional, to taste)
- ¼ teaspoon seasoning of choice (optional). I used Garlic powder.
- ¼ teaspoon herb of choice. I used dried Rosemary.
Instructions

Prepare Your Mug: Choose a microwave-safe mug or ramekin. Lightly grease the inside with butter or oil to prevent sticking.
Melt the Butter: Add the butter (or coconut oil) to the mug and microwave for about 15–20 seconds until melted. Swirl it around to coat the mug and then let it cool slightly.
Mix the Batter: Add the almond flour, egg, baking powder, and salt to the mug. Mix well with a fork until the batter is smooth and lump-free.
Microwave: Microwave the mug on high for 90 seconds. The bread should puff up and feel firm to the touch. If it’s not fully set, microwave for an additional 10–15 seconds.
Cool and Slice: Let the bread cool for a minute, then carefully remove it from the mug. Slice it in half or thirds, and it’s ready to enjoy!

The whole mug bread is one serving. It can be cut into 3-4 slices… so one slice is 1/4 of nutrition value

Love this recipe. I make it using butter and honey for sweetener. Wonderful for breakfast or small sandwiches. I use a straight sided coffee cup for a nicely shaped loaf. Sometimes top with cream cheese and strawberry jam. Never found it dry after toasting.

Well I tried it. It’s definitely edible. I used granulated sugar, olive oil ,and added 30 seconds to the cook time. I’m not sure the extra 30 seconds was necessary but the dough looked wet. It’s not overly dry so I’m confident that was the right decision. I used a pint Wide Mouth Mason jar which would easily accommodate doubling the recipe. I intend to try that next time perhaps add onion powder or some other herbs to just give it a bit of oomph, but it’s definitely edible.

Sorry it didn’t work as well as I hoped. The liquid eggs were very thin but didn’t seem to provide enough liquid leaving the mix very dry. Maybe doubling the equivalent would have worked.
