90-Second Keto Bread in a Mug is a super quick and easy way to make low-carb bread when you're in a rush. You just mix a few simple ingredients like almond flour, an egg, baking powder, and butter in a mug, then microwave it for about 90 seconds. Boom—instant bread! It’s perfect for making a sandwich or as a side with your breakfast, and the best part is, it’s keto-friendly and way healthier than regular bread.

Ingredients
  

  • 3 Tablespoons Almond flour (or coconut flour for a nut-free option)
  • 1 Tablespoon unsalted butter (or coconut oil for dairy-free)
  • 1 Large egg
  • 1/2 Teaspoon baking powder
  • Pinch of salt optional, to taste
  • 1/4 Teaspoon garlic powder Optional. Or seasoning of choice.
  • 1/4 Teaspoon Herb of choice Optional. I used dried Rosemary.

Instructions
 

  • Prepare Your Mug: Choose a microwave-safe coffee mug or ramekin. Lightly grease the inside with butter or oil to prevent sticking.

  • Melt the Butter: Add the butter (or coconut oil) to the mug and microwave for about 15–20 seconds until melted. Swirl it around to coat the mug and then let it cool slightly.
  • Mix the Batter: Add the almond flour, egg, baking powder, and salt to the mug. Mix well with a fork until the batter is smooth and lump-free.
  • Microwave: Microwave the mug on high for 90 seconds. The bread should puff up and feel firm to the touch. If it’s not fully set, microwave for an additional 10–15 seconds.
  • After the timer beeps, take the mug out and let rest, and cool for 2-3 minutes.
    Then take the butter knife and slide it along the inner walls of the mug to ensure the bread is separated from the mug easily.
    Flip the mug on the cutting board and the bread loaf is out of the mug!
  • Slice the bread loaf into 4 slices (usually come out 3 or 4 slices) and it's ready to eat as is - delicious!

Notes

Tips

1. For the best taste and texture, I recommend two options: either toast the bread for 1 minute or grill it in a buttered pan for 1 minute on each side.
2. Leftovers can be stored in the refrigerator for up to 5 days. If you’re freezing the bread, slice the loaf beforehand and place parchment or wax paper between each slice for easy separation. When ready to enjoy, simply take a slice and toast or air fry it directly from frozen for 1-2 minutes.
3. If you don’t have a microwave, baking the mug bread in your oven or air fryer will work too. Place the dough into an oven-proof dish and bake it for 10 minutes at 350 F.
4. Try these breads as a burger bun or sandwich option – works amazing!
5. Microwave in Short Bursts: Microwave the bread in 30-second increments to avoid overcooking. This helps prevent it from becoming dry or rubbery.
