But one hectic morning, as I stared longingly at my kids’ toast while sticking to my keto plan, I decided to give it a shot. I whipped up the batter, popped it in the microwave, and—voilà!—out came this fluffy little miracle.

I toasted it, spread a generous layer of butter, and took a bite. Honestly, it was a game-changer. Ingredients You’ll Need

Melt the Butter: Add the butter (or coconut oil) to the mug and microwave for about 15–20 seconds until melted. Swirl it around to coat the mug and then let it cool slightly.

Mix the Batter: Add the almond flour, egg, baking powder, and salt to the mug. Mix well with a fork until the batter is smooth and lump-free.

Microwave: Microwave the mug on high for 90 seconds. The bread should puff up and feel firm to the touch. If it’s not fully set, microwave for an additional 10–15 seconds.

  • After the timer beeps, take the mug out and let rest, and cool for 2-3 minutes.
    Then take the butter knife and slide it along the inner walls of the mug to ensure the bread is separated from the mug easily.
    Flip the mug on the cutting board and the bread loaf is out of the mug!
  • Slice the bread loaf into 4 slices (usually come out 3 or 4 slices) and it's ready to eat as is – delicious!

Tips

1. For the best taste and texture, I recommend two options: either toast the bread for 1 minute or grill it in a buttered pan for 1 minute on each side.
2. Leftovers can be stored in the refrigerator for up to 5 days. If you’re freezing the bread, slice the loaf beforehand and place parchment or wax paper between each slice for easy separation. When ready to enjoy, simply take a slice and toast or air fry it directly from frozen for 1-2 minutes.
3. If you don’t have a microwave, baking the mug bread in your oven or air fryer will work too. Place the dough into an oven-proof dish and bake it for 10 minutes at 350 F.

  5. Love this recipe. I make it using butter and honey for sweetener. Wonderful for breakfast or small sandwiches. I use a straight sided coffee cup for a nicely shaped loaf. Sometimes top with cream cheese and strawberry jam. Never found it dry after toasting.

      1. Well I tried it. It’s definitely edible. I used granulated sugar, olive oil ,and added 30 seconds to the cook time. I’m not sure the extra 30 seconds was necessary but the dough looked wet. It’s not overly dry so I’m confident that was the right decision. I used a pint Wide Mouth Mason jar which would easily accommodate doubling the recipe. I intend to try that next time perhaps add onion powder or some other herbs to just give it a bit of oomph, but it’s definitely edible.

      1. Sorry it didn’t work as well as I hoped. The liquid eggs were very thin but didn’t seem to provide enough liquid leaving the mix very dry. Maybe doubling the equivalent would have worked.
