Ingredients
  

  • 3 Chipotle peppers in adobo sauce 3-4 Chipotle peppers in adobo sauce
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt
  • 2 garlic cloves minced
  • 1/2 teaspoon olive oil or avocado oil
  • 1/8 teaspoon cayenne pepper Small Pinch, about 1/8 tsp
  • 1/8 teaspoon smoked paprika or red paprika powder about 1/8 tsp
  • 1/8 teaspoon Cumin powder about 1/8 tsp
  • 1/2 teaspoon dried cilantro seasoning
  • 1/2 teaspoon Tabasco sauce
  • 1/2 teaspoon white vinegar
  • 1 teaspoon lime juice
  • 1/2 teaspoon honey or agave syrup

Instructions
 

Directions:

  • Combine all the ingredients together in a food processor. Combine all your ingredients in a blender or food processor. (I used Hamilton Beach food processor)
  • Blend for 30-60 seconds until all the ingredients are well blended and form a smooth pale peachy-pink thick sauce-like consistency. Note: The sauce thickens after couple of hours as it stays in the refrigerator.

  • With the help of the silicone spatula or a spoon transfer from the food processor into a glass jar or a sauce jar.

Storage Tips

Homemade chipotle sauce typically lasts for up to 2 weeks when stored in the refrigerator. The acidity from the vinegar and lemon juice helps preserve the sauce, but it will eventually start to lose its flavor and potency over time. Keep the sauce sealed tightly in a glass jar or plastic container to prevent air exposure, which can lead to spoilage. If you notice any signs of mold, off odors, or discoloration in your homemade chipotle sauce, it's best to discard it. 
To extend the shelf life of your homemade chipotle sauce, you can freeze it in an airtight container or ice cube trays. This way, you can thaw out small portions as needed. However, it may change the texture after thawing, therefore I recommend devouring it fresh.

How Long Do Chipotles in Adobo Sauce Last

An unopened can of Chipotle in adobo can last for up to 2 years. Once you open it, transfer the remaining chipotles and adobo sauce to a tightly sealed glass jar and store in in the fridge. It can last for 6 months to a year. So, next time you reach for that can of Chipotle in adobo, rest assured that you'll have plenty of time and opportunities to use it up before it goes bad.
