Ingredients
  

  • 1 Celery root Large. peeled and grated.
  • 1/2 Cup plain Greek yogurt
  • 1/2 Cup Mayonaise
  • 1 Tablespoon Dijon mustard to taste
  • 1 Tablespoon Lemon juice
  • 2 Tablespoons chopped fresh parsley or chopped fresh dill
  • 1/2 Teaspoon Salt and pepper to taste

Instructions
 

  • To prepare the celery root for this recipe, start by peeling the tough outer skin using a sharp knife or vegetable peeler. Cut the celery root into manageable size pieces that can be comfortably held in your hands. Shred using grater.
    In a large bowl, combine the grated celery root, Greek yogurt, Mayo, Dijon mustard, lemon juice, and chopped parsley.

    Season with salt and pepper to taste.
