Ingredients
  

  • 2 medium zucchini sliced into 1/4-inch rounds or half-moons. About 5 mm.
  • 1 tablespoon olive oil or avocado oil
  • 1/2 teaspoon garlic powder or 1 clove minced garlic
  • Salt and pepper to taste

Optional

  • Grated Parmesan, Italian seasoning, red pepper flakes, lemon juice

Instructions
 

  • Preheat your air fryer to 380°F (195°C)
  • In a bowl, toss zucchini slices with oil, garlic powder, salt, and pepper.
  • Arrange zucchini in a single layer in the air fryer basket. Don’t overcrowd.
  • Air fry for 10-12 minutes, shaking the basket halfway through.

  • Optional: In the last minute, sprinkle Parmesan and air fry until golden.
  • Serve warm. Enjoy!

Notes:
  • For extra crispiness, pat zucchini slices dry before seasoning.
  • Add Parmesan only at the end to prevent burning.
  • Best enjoyed fresh, but leftovers can be stored in fridge up to 3 days and reheated in the air fryer.
