2 medium zucchini sliced into 1/4-inch rounds or half-moons. About 5 mm.1 tablespoon olive oil or avocado oil 1/2 teaspoon garlic powder or 1 clove minced garlic Salt and pepper to taste Optional Grated Parmesan, Italian seasoning, red pepper flakes, lemon juice
Preheat your air fryer to 380°F (195°C)
In a bowl, toss zucchini slices with oil, garlic powder, salt, and pepper.
Arrange zucchini in a single layer in the air fryer basket. Don’t overcrowd.
Air fry for 10-12 minutes, shaking the basket halfway through.
Optional: In the last minute, sprinkle Parmesan and air fry until golden.
Serve warm. Enjoy!
Notes:
For extra crispiness, pat zucchini slices dry before seasoning.
Add Parmesan only at the end to prevent burning.
Best enjoyed fresh, but leftovers can be stored in fridge up to 3 days and reheated in the air fryer.
