Instant Pot Egg Roll in a Bowl is a one-pot quick and easy dinner idea that takes all of the classic flavors of an egg roll - cabbage, carrots, ground pork, garlic, and ginger - and turns it into a delicious, low-carb, and gluten-free meal.

Instructions
Place Instant Pot on saute. Wait until it's hot and then add oil, onions, garlic, ginger and saute until fragrant (5 minutes).
Add meat. Break apart until meat is browned and cooked through. About 5-7 minutes. Drain the fat, if needed.
Add the shredded cabbage, and carrot to the Instant Pot. Or use a bag of coleslaw. Mix everything well.
In a small bowl, mix together the soy sauce, Chinese Five spice, honey, and sesame oil. Pour the sauce over the ingredients in the Instant Pot. Add broth.
Close the lid and make sure the valve is set to "Sealing". Press the "Manual" button and set the timer for 3 minutes.
Once the timer goes off, do a quick release of the pressure by turning the valve to "Venting". Remove the lid carefully and give everything a good stir.Serve the egg roll in a bowl hot, garnished with chopped green onions or egg roll chips

Notes
Variations and TipsI love how easy it is to customize this recipe. You can swap out the ground pork or turkey for ground beef or chicken, or even go vegetarian by using tofu. You can also add different vegetables, such as mushrooms, bell peppers, or broccoli, depending on what you have in your fridge. The sauce can also be adjusted to your preferences, with more or less honey, soy sauce, or sesame oil.You can make the recipe without Five Spice, but I love the flavor that it adds. I think this is what makes it taste more authentic.Use Coleslaw mix instead of shredding carrots and cabbage.
