Sweet Potato Fritters with Bacon and Green Onions

Sweet potato fritters are a delicious and easy way to change up your regular old potato fritter recipe. They're packed with nutrients, and they're versatile enough to be served as a side dish or a main course.

Ingredients
  

  • 1 large sweet potato peeled and shredded
  • 1 large egg whisked
  • 1/3 cup parmesan cheese grated (or shredded mozzarella cheese)
  • 1/4 cup flour can sub for almond flour
  • 1 teaspoon brown sugar optional
  • salt and pepper to taste
  • 1/2 teaspoon onion powder or garlic powder
  • 1/2 teaspoon oregano
  • 2 tablespoons green onions finely chopped
  • 2 tablespoons cooked bacon crumbles optional
  • Oil of choice. I use Avocado oil.

Instructions
 

  • Peel and grate the sweet potatoes. I use my Hamilton mini food processor to shred potatoes. 
  • Rinse the shredded potatoes under cold water until the water runs clear. This helps to get rid of the starch. 
  • Squeeze the water and moisture out. I find this cheesecloth bag helps me to keep the shredded potatoes in place when I rinse them, then squeeze them out to remove the water and moisture. Or you can pat them dry with paper towels.
  • In a separate bowl crack the egg and whisk it with green onions.
  • Mix together with shredded potatoes. Add salt, peppers, spices, flour, and bacon, and mix until well combined.
  • In a large skillet, heat a thin layer of oil over medium heat. 
  • Using a spoon, add rounds of the sweet potato mixture to the skillet and press into a pancake/fritter shape with the help of a spatula. 
  • Cook in the skillet over medium heat for 3-4 minutes per side or until they are golden brown on the outside and cooked through inside.
  • Serve with a dollop of sour cream on top, or your favorite dipping sauce. I loved serving mine with homemade Chipotle dipping sauce.

MAKING SWEET POTATO FRITTERS IN THE AIR FRYER

  • Preheat your air fryer to 400°F (200°C)
  • Line the air fryer basket or tray with Air Fryer parchment paper.
  • Add rounds of the mixture to the air fryer tray and press into a pancake shape with the help of a spatula. Lightly spritz them with spray oil or brush with oil.
  • My air fryer oven-type style allowed me to cook 6 fritters at a time. Depending on your air fryer size and style you may fit more or less. Cook in batches, if needed.
  • Air fry mode at 400F/200C for 3-4 minutes per side flipping halfway. Once turned, give them one more oil spritz. Fry until the fritter is cooked through and the skin is golden brown and crispy.
