Instructions
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
Melt the cheese: In a microwave-safe bowl, combine mozzarella and cream cheese. Microwave for about 40-50 seconds, stirring halfway through, until melted and smooth.Tip: Stir well to fully incorporate the cheeses—you want a stretchy, unified dough base.
Mix the dough: Add almond flour, baking powder, and optional spices to the melted cheese mixture. Stir to combine slightly, then add the egg. Mix well using a spatula or your hands until a dough forms. If the dough is too sticky, chill in the freezer for 20-30 minutes.
Shape your bagels: Divide the dough into 4–6 equal parts (depending on your preferred size). Roll each into a rope and form a ring, pressing the ends together to seal.
Add toppings: Place the bagels on the lined baking sheet. Sprinkle generously with Everything But the Bagel seasoning or your favorite topping.
Bake for 14–18 minutes, or until golden brown and cooked through. Let cool slightly before slicing.
Notes
Recipe notes:
1. Leftovers (if any left) can be refrigerated for up to a week. Freezing works great too! Just slice the bagels before freezing, and when you're ready to enjoy, pop them in the toaster or air fryer for about a minute.2. If you have a nut allergy, you can substitute for Gluten-free baking flour instead, or CarbQuick baking mix. Some people have also had success using unflavored protein powder instead of almond flour—worth experimenting if you're curious!3. If you don't have a microwave, melting ingredients on stove top will work too.4. Try these bagels as bun or sandwich option - works amazing!
